Angel Hair and Italian Meatballs


So Derrick has been craving meatballs and I set out to find a simple recipe.
I found it on cooks.com.
I tweaked it a little and the result was yummy and easy and can be done in a healthy but flavorful way. I love that!

First preheat oven to 350.

In a large bowl, using my fingers I combined the following:

1/2 pound lean ground beef (could use ground turkey)

1/2 pound mild (or sweet) italian sausage (could use turkey or chicken variety)

1 cup fresh whole wheat bread crumbs (made from pulsing 3 pieces of wheat bread with crusts in the food processor until small bread crumbs form)

1/2 cup milk

3 cloves garlic minced or pressed

1 Tbsp. parsley flakes
1 tsp. onion powder

1 tsp. ground oregano

1/4 cup grated parmesan


Form golf ball sized balls and bake for 15 minutes. Flip and bake additional 15 minutes.
Simmer cooked meatballs in a jar of your favorite marinara sauce and serve over cooked pasta. We have ours with angel hair garnished with parmesan and parsley. Enjoy!

Jen- the meatballs were good. Derrick was happy, so I was happy.

Terry Big Daddy- Thanks! I checked out your blog. My hubby loves ribs and bbq in general. I will be making note of your sauce to try out once we get a new propane tank for the grill.
