Taco Soup



Again, the last 2 weeks have been crazy busy with all day meetings. When I get home I want to make something easy or have it waiting for us which is even better. This recipe was given to me by my sweet friend, Crystal. I tweaked it a little and it is perfect for freezing cold wintery days like today! The best part is you throw all the ingredients into the crock pot and dinner is ready when you get home. I love that!


Ingredients:
1 Tbsp. olive oil

1/2 small onion, diced

1 clove garlic, minced

1 lb ground turkey

1 can kidney beans, drained and rinsed

1 can black beans, drained and rinsed

1 can ranch style beans

2 cans stewed tomatoes

1 can rotel tomatoes with diced green chiles (original)

1.5 packages of taco seasoning (I used McCormick brand)


Sautee onion and garlic in olive oil until cooked through and beginning to turn golden, add ground turkey and brown thoroughly. Drain fat. Transfer turkey to crock pot basin. Add remaining ingredients and cook on low for several hours. Serve with sharp cheddar and sour cream. Crystal serves hers over Frito's. We skipped the chips.

Sugar that's my go-to recipe. I make at least twice a month. I can whip it up in about 10 minutes. I put olives in mine because we love olives. Black olives. I'm so glad you have the recipe without the Ranch dressing mix powder crap stuff. It tastes so much more "real" without the ranch. The best batch I made was with Simply Organic taco seasoning.
