Shrimp Pesto Pasta


This recipe is so flavorful and so easy. I had a late meeting, got home at 8:00 and had dinner ready by 8:30. Fantastic!

Ingredients:

2 tbsp. olive oil

4-6 cloves garlic, minced

1 pound uncooked pealed and deveined shrimp

2 quarts cherry tomatoes, halved
1 half lemon

1/2 jar of your favorite pesto

shredded parmesan cheese for garnish

thin spaghetti or angel hair pasta cooked according to directions


While pasta is cooking, heat olive oil in deep skillet or large sauce pan. Sautee garlic until turning golden.

Add shrimp and cook for 2 minutes on medium high heat.

Squeeze lemon over shrimp. Flip shrimp and cook additional 1 minute.

Add pesto and stir gently until combined.

Add tomatoes and fold into shrimp pesto mixture. Squeeze lemon again over shrimp. Cook on medium until skin of tomatoes are bursting. Serve over pasta and garnish with parmesan cheese.
