Glazed Over


I love all kinds of seafood and a quest for a healthier diet encourages this delightful dish. It is easy, fast and SO GOOD! I could eat it twice a week and not complain. Derrick might just agree. The second it hits the plate we are both silent as we devour this healthy meal.

Ingredients:
2 tilapia filets
(increase all ingredients for larger meal)
Marinade:

1/4 cup sherry

3 Tbsp. low sodium soy sauce

1 Tbsp. minced fresh ginger (or 1 tsp. ground dry ginger)

3 cloves garlic pressed or minced

1 lime squeezed

dash of asian chile sauce (very hot, so do not include if you don't like spicy)

2 Tbsp. honey


Whisk together and set aside

Glaze: (same ingredients as above, your eyes aren't fooling you)
1/4 cup sherry

3 Tbsp. low sodium soy sauce

1 Tbsp. minced fresh ginger (or 1 tsp. ground dry ginger)

3 cloves garlic pressed or minced

1 lime squeezed

dash of asian chile sauce (very hot, so do not include if you don't like spicy)

2 Tbsp. honey whisk together and set aside.

Preheat oven to 350. Place tilapia in glass baking dish. Pour marinade over fish and bake for 20-25 minutes or until fish is flaky. Meanwhile, pour glaze ingredients into sauce pan over medium heat. Simmer for 5-10 minutes. Stir often. Mixture will slowly reduce to glaze. When fish is ready, plate it and drizzle each fillet with glaze.

I serve this with Near East curry cous cous (also low fat). ENJOY!

I've never fixed talapia but we both love seafood so I may have to give this a try.

My favorite marinade for steak is equal parts soy sauce, cooking sherry and pineapple juice. You should marinade them in the fridge and not for longer than an hour or your meat will not be good. But it really give a steak a nice flavor.
