One of my favorite blogs is "Smitten Kitchen" and she posted a fabulous Pumpkin Bread Pudding recipe before Thanksgiving. It is incredibly easy and I made it the night before Thanksgiving and it was beloved my me and my mother in law the instant the spoon hit our mouths. It is just the right kind of sweet and the texture of the bread is bouncy and soft, but not squishy. I will definitely be making this for any holiday parties we attend. It might be a new substitute for my favorite pumpkin pie!
