
The Delectable Wonderfulness Called Pot Roast
There is just something great about coming home to a house that smells of rich savoury broth and knowing that dinner is already made. I make pot roast about once a month and Derrick always shares a big smile with me when I tell him that's what's for dinner.
It is one of my favorite easy meals and I thought I would share it with you:
Ingredients (for two people):
1 lean 2 lb. beef roast
1 can Cream of Mushroom Soup
1 pack Liptons Onion Soup Mix
1/2 cup of water
4 cups thickly sliced mushrooms
1 crock pot
Directions:
Plug in your crock pot (cause its a real bummer when you forget).
In the basin, combine both soups and water and mix until well blended.
Sit roast on top of mixture. Pour uncooked mushrooms on top of the roast.
Cover with the lid.
Turn on High.
Cook on high for 8 hours. I usually start the pot at 11 and dinner is ready at 7. I serve it with mashed potatoes.
(you can also cook it on low for 9 hours if you want to put it on when you leave for work)
